Campari is an alcoholic liqueur obtained from the infusion of herbs and fruit in alcohol and water. Gaspare Campari created this bittersweet red aperitif, flavoured with 68 herbs and spices, between 1860 and 1867 in the cellars of his Caffe Campari coffee shop in Milan. Campari is often used in cocktails and is commonly served with soda water or citrus juice, or with prosecco as a spritz.
